Lor Mai Gai


Loh Mai Gai or Lor Mai Gai??


Ingredients


Ingredients for toppings:-


2 chicken thigh meat (boneless)


8 pcs preserved chinese mushroom (soaked, drained)


3tbs sesame oil


1tbsp light soy sauce


1tbsp osyter sauce


1tpsp cooking oil


1tsp corn flour


1tsp sugar


tsp huo tiao jiu


dash of pepper


Seasoning for rice:-


300gm glutinous rice (washed, soak overnight & drained)


5 tbsp seasme oil


2tsp light soy sauce


1 tsp sugar


1 tsp salt


Method to cook toppings:-


1) Chopped chicken into smaller bite sizes


2) Marinate with seasonings except cooking oil.


3) In a wok, add oil to heat.


4) Add marinated chicken and stir fry over high heat for 2 mins. Add in mushroom and fry for another 1min.


5) Dish out, set aside.


Method for cooking rice:-


1) Using the same wok, add 3tsp oil to heat. Add washed rice and seasonings and stir fry till its sticky. (Abt 5 mins)


2) Dish out.


Method to assemble together:-


1) Place a few pcs of mushroom, chicken in a small bowl.


2) Add in rice and press down to fill up the rim of the bowl.


3) Steam over high heat for 45-an hr.


*Note: You can add in tablespoon of hot water on the "harder" part of the rice when steaming to make it softer*
